INGREDIENTS

  • 4 ears fresh corn
  • 1 cup mayonnaise
  • 1 cup cotija cheese, crumbled
  • 1 tsp chili powder
  • 1 lime zested and juiced
  • 1/2 cup fresh cilantro, chopped
  • salt and pepper to taste
  • 12 small cups for serving

INSTRUCTIONS

  1. 1 Shuck the corn and remove all silk.
  2. 2 Boil a large pot of water.
  3. 3 Add the corn to the boiling water and cook for 5-7 minutes until tender.
  4. 4 Remove the corn from the water and allow it to cool.
  5. 5 Cut the kernels off the cob and place them in a large mixing bowl.
  6. 6 Add the mayonnaise, cotija cheese, chili powder, lime zest, and lime juice to the bowl.
  7. 7 Mix well until all the ingredients are combined.
  8. 8 Season with salt and pepper to taste.
  9. 9 Fold in the chopped cilantro gently.
  10. 10 Divide the mixture into individual cups for serving.
