INGREDIENTS

  • 12 oz dried penne
  • 3 tablespoon butter
  • 2 cloves garlic minced
  • 1 1/2 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • salt and pepper to taste
  • 8 oz smoked salmon cut into thin strips
  • 2-3 sprigs fresh thyme

INSTRUCTIONS

  1. 1 Cook the pasta: Cook the pasta in a large pot with salted boiling water according to the instructions on the package. Reserve ½ cup of pasta water. Drain the pasta and set aside.
  2. 2 Make the Alfredo sauce: Melt the butter in a large skillet over medium heat. Add the garlic and cook for 30 seconds until aromatic. Stir in the cream and bring to a gentle boil. Add the ½ cup of pasta water and stir. Reduce heat to low. Add the Parmesan cheese and season with salt and pepper; stir until the sauce is smooth.
  3. 3 Toss everything together: Add the pasta and salmon to the saucepan and toss it well with the cream. Taste for seasoning and adjust as necessary.
  4. 4 Garnish and serve: Garnish with fresh thyme and serve immediately with additional Parmesan cheese.
