INGREDIENTS

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • 8 oz pineapple chunks, drained 1 can
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch + 2 tablespoons water
  • 1 red bell pepper, thinly sliced
  • 1/2 teaspoon ground ginger
  • to taste salt & pepper
  • cooked rice for serving
  • green onions & sesame seeds for garnish

INSTRUCTIONS

  1. 1 Place seasoned chicken in the slow cooker.
  2. 2 In a bowl, whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger. Pour over chicken.
  3. 3 Add pineapple chunks and bell pepper. Cover.
  4. 4 Cook on low 5–6 hours (or high 3–4 hours) until tender.
  5. 5 Remove chicken. Mix cornstarch + water; stir into sauce. Cook 15 minutes until thickened.
  6. 6 Return chicken, coat with sauce, and cook 5 minutes more.
  7. 7 Serve over rice. Garnish with green onions and sesame seeds.
